Mango Ginger Jam

Sweet and spicy is what this is! And great for toast or as a topping for pancakes, crepes, or waffles. Or if you’re making French Toast with fruit and cream cheese in the middle, try using this mango ginger jam instead of the fruit. Dare I admit that I love a spoonful of peanut butter with this jam on top?

Mango Ginger Jam Ingredients:

red-dot 5 cups ripe mangoes, peeled and sliced (or frozen mangoes)

red-dot 1-2 cups sugar

red-dot 3 T lemon or lime juice

red-dot 1 cup candied ginger cut into small pieces

red-dot ½ t ground ginger


Wash, peel, and pit mangos. Cut into chunks. Combine all ingredients and let sit for several hours or overnight.

Use 20+ orange seeds tied in cheese cloth to promote thickening.

Bring all ingredients to a boil and cook over medium heat (continuing to boil) 1 hour or until jam reaches the consistency you like. Stir frequently to prevent burning.

To test if the jam is ready, put a flat plate in the freezer for 4 minutes. Remove and put a small amount of jam on the plate. Return to the freezer for a couple of minutes. Remove and run your finger through the jam. If the jam remains separated, then it is ready for the next step: Enjoy or store……refrigerate, freeze, or can according to canning directions.
