Tasty Tomato Basil Soup

 La Joya Hotel guests love the aroma and taste of John’s tomato basil soup. Perfect when they arrive at our hotel late at night. Easy to make, tasty to eat! Serves 6.

Tomato Basil Soup


red-dot 5 cups (10-12 medium) tomatoes, peeled, de-seeded, and chopped

red-dot 5 medium garlic buds, crushed

red-dot 1 medium onion, chopped

red-dot 2 T chicken bouillion/consommé mix (or salt to taste)

red-dot 1 Kg (36 Oz) tomato pure

red-dot 2 sticks butter

red-dot 1 cup cream

red-dot 12-14 washed fresh basil leaves, chopped and simply Ground Pepper


Sauté tomatoes, garlic, onion, and chicken bouillon in small amount of olive oil. Simmer 15 minutes, cool, and puree in blender. Return to pot and simmer for another 15 minutes with tomato puree, butter, cream, basil, and ground pepper to taste. Add small amounts of water to desired consistency.

Garnish with diced cucumber and sprig of basil, parsley, or celery leaves. Serve with a light salad and bread or croutons toasted with garlic and olive oil.

*To easily peel several tomatoes, cut a shallow X on the bottom of each tomato, put 3-4 in boiling water for 10-20 seconds until skin begins to peel away, remove from water and peel. This is much easier than scorching the skin of each tomato over a flame as my mother used to do (but what fun it was to watch as a child!).
